Sweet corn herby coleslaw (simple version)

Serves 1: 213 calories per serving.


This is based on an Ottolenghi dish which is a delicious step above this one, but that is perhaps best to save for when you have a couple of hours spare... I'll post the time-consuming one later, but for now this is a great addition for pinchitos morunas, turkey burgers, seeded schnitzels or other meat dishes which you can find elsewhere on this blog.


Ingredients here are for 1 serving, but it is just as easy to make double the quantity and keep it in the fridge for a meal tomorrow if you're in shredding mode...


The chart below shows the calorie content for one serving of each ingredient.


Ingredients:

150g white cabbage finely shredded

150g carrots coarsely grated

80g canned sweet corn

10g coriander

10g mint

salt and pepper


Dressing ingredients:

25g mayonaise

0.5 tsp dijon mustard

0.375 tsp sunflower oil

0.5 tbsp lemon juice

05 clove garlic



Mix all the dressing ingredients together in a small bowl. Mix the other ingredients in a large bowl until evenly distributed. Pour the dressing on top and mix thoroughly. Season to taste with salt and pepper.
